Jackfruit for the win

Lately all I want to eat is jackfruit! Raw as a fruit or using unripened green jackfruit and cooking with it! We've been trying to avoid soy and wheat, so we tried unripened green jackfruit and it totally fits the bill for something meaty to smother in BBQ sauce. You can find canned green jackfruit (make sure to get the one in water, not brine) at your local Asian market. It's really simple to make: open the can and strain the jackfruit, put in some tupperware, and cover it generously in hickory BBQ sauce, let it marinate for at least 4 hours to help the sauce soak in, and then simple sauté it on medium heat with some coconut oil, as it starts to heat up, you can use a masher to break down the chunks to resemble more of a 'pulled' kind of texture. Simple enough right? We served it with baked plantain chips, Sriracha-garlic kale, and quinoa.
